The taste is closer to Harmony than expected, but is noticeably less watery rolling around the mouth and it’s apparent there’s a different variable at play. Hakushu was built at the foot of the Southern Japan Alps, a location deliberately chosen by Suntory to provide a contrast to the style of spirit produced at Yamazaki. The Hakushu 12 Single Malt is made up of carefully selected malt whiskies all aged for a minimum of 12 years in various casks, created in honor of Suntory Whisky's centenary. Nestled deep in Mount Kaikoma, in the heart of Honshu, the Hakushu distillery is defined by the area’s unique terroir, climate and exceptional mountain water, which is filtered through granite rocks. At fermentation, artisanal craftsmen use wooden washbacks to encourage maturation by retaining heat in the cool air at the distillery.It carries the huge green notes and mild peatiness of its older catalog mates, but it has a much quicker, one note finish. It's much more complex than the 12 as you would expect and the oak is just about right but it lacks balance and the finish just isn't as good as the 12.

Created by the dream for a new type of whisky of Keizo Saji, the second master blender, the unique taste made in distinct four seasons in high altitude is praised by the most curious whisky connoisseurs and lovers of gastronomy. These special designs are a homage to monozukuri craftsmanship – a Japanese principle that embodies elevated artisanship, relentless pursuit of quality, ingenuity and expressiveness. Disputes that cannot be settled over multiple drams of whisky shall be solely submitted to the court of Amsterdam, The Netherlands unless mandatory applicable law provides otherwise. Whisky aged in Mizunara casks is thought to need more time to reach its potential than traditional aging types; thus, the older the Hibiki expression, the more Mizunara characteristic. Once the whisky has aged for a minimum of 18 years, it is brought to proof with pure Japanese spring water.
