Baking notes: It may seem that there is too much batter for the 8-inch square pan, and the brownies may seem underbaked when taken out of the oven. As they cool, though, they transform into cubes of fudgy deliciousness. If you are a cake brownie lover, they will be downright disturbing. Also, the original recipe called for margarine, but butter is so much better here. Suddenly, robins are everywhere, and I have been taking many photos. Here is a lovely robin in the redbud tree. Whole milk- No substitutions here. The fat in whole milk always produces a lavish and indulgent homemade ice cream. Definately will make them again. I used cocoa because we never have chocolate in my house and they were just gorgeous. Make the fudgy middle: Preheat the oven to 350 F. In a microwave safe bowl, melt chocolate chips, milk, butter and sugar together in the microwave for one minute. Stir and if needed cook for another minute. Add vanilla and stir. Set aside. I am 11 and found these "fudgies" to be amazing. I don't like oats, and just used peanut butter. Much better than any pb/chocolate candy.

I used bakers chocolate squares and they turned out great. They are so easy to make, just watch out, it's hard to stop eating them! You only need 7 simple ingredients to put this homemade ice cream together that you can find at your local grocery stores. They are: Make the oatmeal cookie dough: Cream butter and sugar in a stand mixer until fluffy (I like to mix for about 2 minutes until it is really fluffy and changes texture and color). Beat in the eggs until well mixed. Add in the vanilla. Gradually add in the flour, baking soda and salt. Lastly stir in the oats. They are stogged to the hilt with chocolate . . . melted chocolate, milk chocolate chunks, semi sweet chocolate chips . . . and walnuts. For someone who is not particularly fond of peanut butter, these were surprisingly good! And they are sooo easy to make.

They are rich and delicious served slightly warm with a nice cold glass of milk. Did I tell you these were moreish? Well, they are . . . I have to say, these are the perfect brownies for summertime–I will be freezing some, and when we go birdwatching, I can throw a few into a brown bag along with some sandwiches and fruit, and have an easy picnic. Or, they can be served with cut-up watermelon or bing cherries for a nice summer dessert. Here is the recipe. In fact . . . I would be most surprised if you were found to be sneaking down to the kitchen in the middle of the night . . . just for another little smidgen. Brownie chunks and crumbles- Make your own brownies! Whip up a batch of my Triple Chocolate Gourmet Browniesahead of time, crumble them up, and toss them into the ice cream as it’s churning. You can even keep the crumbles of homemade brownies in the freezer when you don’t have time to make a fresh batch. Or, grab some store-bought brownies at the store to make things extra easy!Sugar- White sugar is best, although another granulated sugar, like cane sugar, should also work well. These are ok, they are very easy to make. My mum loved them but I thought they were too sweet and rather boring.
