You can roast the beets in advance, refrigerate, once cooled, and peel, grate and make the dish the next day. Sure! If you can find golden beets, feel free to use them. Flavor and texture-wise golden beets are almost identical to red beets. Can you make this salad ahead of time? They help contribute to a healthy and balanced diet, ensuring you can enjoy the summer season while nourishing your body! Shred the beets and carrots: Wash and peel the beets and carrots. Then cut off the top so you have a flat surface and shred them using a box grater, a food processor with a shredding attachment, or a vegetable spiralizer.

To save time, you can boil the beetroots and store them in the refrigerator a few days in advance. Simply grate and fry on the day you want to eat the buraczki. Shredding uncooked beets by hand with a box grater or handheld spiralizer is possible, but it requires some effort and can get quite messy, so I highly recommend using a food processor with a shredding attachment if you have one. Sometimes called buraczki na ciepło, it can be enjoyed warm or cold. When it’s eaten warm or fried it is called buraczki zasmażane (fried beets). What to serve the buraczki with? As we're all about salads here at the moment I find myself trying out different flavours and dressings so they're not boring.

Make ahead of time tips

If you omit the flour the sour cream is likely to split once you combine it with the hot mixture. This won’t look very appealing so I do not recommend omitting the flour. Is your garden overflowing with fresh beets? I bet you didn’t know beets could be so versatile! Here are some of my favorites. Buraczki zasmażane should be served fresh, it’s not recommended to pasteurize them. The flour and fat won’t make the salad last long.

Fill up with Grains or Legumes; this salad is so good with quinoa on the side! It makes it more filling too! Soy sauce: not a traditional ingredient but these days we are always looking for that elusive umami element in our food and soy sauce is a great ingredient for adding depth of flavour. And it goes exceptionally well with beetroot (I also use it in traditional Polish barszcz soup!). Consider using seasoning like dried mint in case fresh one is unavailable. How to make vegan raita? Remember, beetroot juice stains EVERYTHING, so be sure to move everything out of the way, maybe wear a pair of cooking gloves, and do NOT use your best cutting board unless you’re okay with it being stained forever. Salads can be made with either cooked grated beets (as in cold beet salad), or raw (see Polish beet slaw). The apples are easily omitted and the parsley which is used as a garnish can be grown in an indoor herb garden. How long does this shredded beet salad keep for? Use a box shredder to shred the vegetables instead of a food processor. Please refrain from shredding the beets, apples, and carrots in a food processor. We love a little ghee tadka on the top with some urad dal, mustard and cumin seeds, a pinch of hing and sunflower seeds.

As mentioned above, this shredded beet will easily keep in the fridge for 4 days. As long as it is properly refrigerated and not left on the counter the acid in the dressing, as well as the fact that nothing in the salad is cooked, will help keep it fresh and crisp. Do you peel the beets before shredding? If you add some horseradish, you will get a spicier version of buraczki called ćwikła (chweek-wah). Buraczki Zasmażane Recipe [Warm Beets Salad] Honey: this is the most commonly used sweetener in Polish salad recipes but you can use maple syrup or agave syrup instead and enjoy it vegan. Olive oil – The fragrant aroma of extra virgin olive oil adds rich flavor. As with any salad, use high-quality olive oil. Buraczki is the Polish word for beetroots. Healthy Shredded Beet Salad.

Prepare beets: Preheat the oven to 400 F/200 C/ gas mark 6. If your beets are small roast them whole, but large beets can be halved. Wrap the beets individually in foil and place on top of a small baking sheet. Alternatively, line your baking sheet with foil and place the beets on top (cut side down if they’ve been halved) then cover with foil. Beets – Select a firm small to medium-sized beet, which is typically sweeter and juicier. The color should be deep magenta throughout with no discoloration. While dishes prepared with cooked beets, like my kale and beet salad and my Mediterranean beets are more popular, you can absolutely eat beets raw! Of course the flavor may change as you switch out vegetables, but this just opens up your options to an even larger variety of salads. Beet Salad Ingredients Add beets: Add the grated beets, lemon juice, salt and pepper, stir thoroughly and cook for a minute or so until the mixture is hot, stirring often.
