Whilst some recipes in this book do use onion, as I can’t tolerate it myself, you’ll find that those recipes always have an easy substitute. Even with the few recipes which don’t provide a veggie or vegan option, they can still usually easily be adapted to be so using the right gluten-free and vegan alternative – so please don’t think it’s impossible! Does the book have low FODMAP recipes in it? What about lactose-free? And now that my wildest dreams had been far, far exceeded, I was convinced I’d peaked. But the madness only continued… Chopped tomatoes: Even the cheapest tin of chopped tomatoes works wonders here, so get whatever’s cheapest. Simply use grated dairy-free cheese instead of mozzarella to make this recipe dairy-free. Can I make your one-pot unstuffed peppers recipe veggie or vegan?

Yes, but you probably shouldn’t call the finished dish ‘unstuffed peppers’! Here’s a few other veg swaps you could make, as long as they’re all finely chopped: of all the ingredients used are easily available in supermarkets. Apart from psyllium husk and tapioca starch that are needed for 2 recipes, you can easily source everything else you need. Beef mince: Ideally use a lean beef mince or lots of fat will come off it and make everything a little soggy, but if using a higher fat mince, you can always drain it from the pan.Even with the few recipes which don’t provide a veggie or vegan option, they can usually easily be adapted to be so using the right gluten-free and vegan alternative – ie. a gluten-free and meat-free mince or a gluten-free egg replacement powder for example.
