You can sever the tail by doing the dodge mount attack thing where you slap it with your giant arrow, I believe. I don't use it to avoid rocks whilst running a rapid because I don't want the problem of turning the boat sideways into a potential broach scenario. As most rivers have flat sections I'd take the opportunity to swap form right to left for a while, my J-stroke is much better on the left anyway so it makes sense.
