We currently have three core expressions: our original ex-Bordeaux Cask Single Malt, our American Oak ex-Bourbon Cask Single Malt and our ex-Oloroso Sherry Cask Single Malt, all carefully crafted in our distillery in the Old Town Hall, Bovey Tracey. Only when it’s perfectly ready do we gently water it down with purified water from the Welsh marches, then gently non-chill filter to our hearty house strength of 42%. The build up to the first release of English single malt was palpable, and it just exploded onto the market. It’s England’s first modular distillery too; Forsyths constructed the entire distillery in a hangar on Speyside, broke it down into sections to transport, and then reassembled it in the Cotswolds. The nose is full of tropical fruit and smattered with pepper; the palate runs away with decadent notes of heavily candied orange and burnt brown sugar, and dry apple and nutmeg join ahead of an oaky finish. It has a good whack of peaty flavours (if you’re a peat nerd then you’ll want to know it comes in at 45ppm) that make it obviously smoky, but without totally overpowering all of the other flavours. With limited capacity, Bimber has attracted a strong community of whisky lovers through its single cask program. Production is split between the working farm and the distillery, with 4 tons of malted barley put through its mash tun and 10,000-liter fermenters annually, using equipment shared with the brewery. English Malt is whisky made from a cereal grain and water that has been distilled at least twice in a copper pot still and matured in wooden casks of at least 700 litres for a minimum of three years.
