It consists of a rectangular plastic bin with a surface on top into which you snap one of two slicing blades, a julienne blade, a grater, a ribbon blade, or a spiralizer. Though the Börner V Power Mandoline had interchangeable blades, including three inserts that provided 10 different cuts and four different thicknesses (and nifty storage for them), we found that the blades were not very sharp and made slicing difficult when it came to thicker cuts like potato. She has worked in test kitchens for small kitchen appliance brands and national magazines, including Family Circle and Ladies’ Home Journal. It doesn’t have marked settings but it can be adjusted to an infinite number of thicknesses up to about ¾ of an inch.

The adjustable mandoline has a lot of swanky new features we liked, like a meter that displayed the width of different thickness settings, compact storage for the interchangeable blade, and a folding kickstand.

Its narrow slicing surface easily cuts through tomatoes and potatoes, and there are additional blades for fancy cuts like julienne and waffle. However, when I have a craving for homemade potato chips, want to indulge in an au gratin, or am making cucumber salad for a crowd, a mandoline is indispensable. To test out the slicers, I cut multiple types of fruits and vegetables, from very firm ones like potatoes and parsnips down to difficult-to-slice soft ones like tomatoes and lemons, making sure to test each slicer at all of its thickness settings. The V-shaped blade allows you to quickly slice with less resistance, and the textured runway keeps food from sticking (a major safety hazard). If you’re looking to switch from slicing to julienne (a helpful setting for making French fries), all you need to do is flip the deck over.

The model pictured here is the thinner of Benriner's two models and is thin enough that some wider foods, like very large potatoes, may not fit. We tested the blades at multiple thicknesses to determine how well and how safely they performed their function. In others, the grips were wobbly and unstable or created a barrier between us and the task, making it feel counterproductive and potentially dangerous.

During at-home testing, we sliced up firm potatoes and thick-skinned eggplants and evaluated the ease of use based on factors like blade assembly, thickness adjusters, non-slip feet and handles, hand protectors, ease of cleaning and storage. When it came time to test how well this mandoline slicer sliced potatoes for fries, we found that while the julienne attachment was easy to insert, it was duller than the other blades, making it difficult to use. The blade of the mandoline does not sit completely flush with the plastic, creating ridges around the slicing area.

Though the settings on the French mandoline tend to give you more options, she agrees that the best mandoline slicer for a home chef is the Japanese mandoline, like the Benriner Mandoline Slicer. We evaluated how safe (and easy) it was to clean out gunked-up blades and attachments, and, in some instances, scrub pigment off of plastic that was tinted by fruits and vegetables. The Super Benriner comes with a better handguard than the original model, but the pros find it virtually useless. This makes the mandoline somewhat clunky when folded down, but the advantage is, you won’t be fumbling around your kitchen looking for the other blades because they’re tucked inside.
