Generally, the more time cognac spends in the barrel the nuttier and richer it becomes. VS, on the other hand, tend to be more vibrant and fresher, so this isn’t a case of one being better than the other. How is VS Cognac drunk? Box wine translates as ‘last resort’ to me; the final two days of the French holiday option when you’ve completely run out of cash and you’ve resorted to heading to the local supermarche and drinking on the balcony until the 2am flight home. But stereotype busting improvements are afoot. In 1804 Arzac Seignette founded his Cognac House, which rapidly became one of the leading brands of the 19th century. The amount of time spent in barrel defines the style of a Cognac. A VS will spend at least two years in oak; VSOP is aged for four years; and XO for 10 years. Above these classifications, the finest blends and vintage Cognacs can be aged for many decades. This is a cognac for those people who think cognac 'isn't for them', introducing a new style of enjoying the spirit, complete with a contemporary design and flavour profile. We hope the launch of Seignette will be a breath of fresh air for the cognac category in the UK market."

Over 40 different eaux-de-vie are blended for Hennessey VS which spends 2 years in French oak for a superbly full-bodied cognac carrying notes of dried fruits, subtle spice, and mellow vanilla. In fact, the entire age statement grading system was created by Maurice Hennessey so in a way, this is the definitive VS cognac! Within cognac production, you’re likely to find different letter combinations on the bottle. These letters signify the age statement. In the case of VS cognac, this stands for Very Special and means that the youngest eaux-de-vie in the blend will have been aged for at least two years. You might also see three stars instead which pretty much means the same thing!

Cosaporto is a Rome-based outfit, now working in London, which has come up with the nifty idea of supporting local restaurants by delivering bottles from their cellars to your door. It has a huge range of single-bottle and multi-bottle offerings and a few ‘dinner to your door’ options, too. Probably the most common form of cognac available is VS cognac, so let’s break down exactly what this means, how to drink it, how it differs from other letters you might see and crucially, where to head to try some of the good stuff! What is VS Cognac? Vinatic brands its wines as ‘no-nonsense’ which, in common parlance, tends to mean ‘not very good’. They’re doing themselves a disservice, as this small range of wines, labelled ‘Cow’, ‘Leaf’, ‘Fish’, ‘Root’ and ‘Legumes’, are wonderfully palatable, easy-drinking session wines – perfect for a cosy evening where ‘dinner’ involves little more than unwrapping the cheese and charcuterie.

At Ch â te au de Be aul on , they only use grapes from their own vine yards to make their cogn acs . This X O is made only with Fol le Bl anche and Colomb ard grapes and is aged for 12 years in Lim ous in and Tr on ç ais oak barrels before bott ling . There ‘s a lot going on with the nose ; almonds and softly spicy cinnamon m ingle with tang y peach arom as while on the palate it ‘s rich and fruit-laden with dark orange mar mal ade flavours which are well balanced with a sharper citrus hint . It all leads to a long , smooth finish with a pleasing fresh ness .Hen ness y Parad is , created in 1979 , is named for the Hen ness y Founder ‘s Cell ar where only the finest , rare st , and oldest e aux – de – v ie are kept . The cogn ac is made from 100 e aux – de – v ie aged for up to 130 years and is presented in a stunning dec an ter by Italian designer Fer ru cc io Lav iani . Paul John ‘s Go an Br andy , made with U gn i Blanc and Bangalore purple grapes and matured in French Lim ous in oak cas ks , is an interesting release . A rom as of honey , strawberry liquor ice , orange z est and but ters cot ch fill the nose , comple mented by notes of cran berries , caramel and rum – so aked ra is ins throughout the palate . The Italian bubbles wine box, sourced from the cellars of the Enoteca Rabezzana restaurant in Barbican, is a real steal for the price; containing Prosecco DOCG Asolo “Ca’ Zen” from Veneto, a Brut Rose’ Ivan Dante Rivetti from Piedmont and, by far the greatest inclusion, a bottle of little-seen (in the UK at least) Ferrari Maximum Brut from Trentino. A genuinely brilliant idea which is as close as you’ll get right now to doing a ‘supermarket sweep’ around some of London’s most interesting wine collections. This is the original ‘ extra – old ‘ cogn ac , which was first bottled in 1870 by Maurice Hen ness y for family and friends . It is much darker and more complex than the VS OP , with appealing leather and tobacco notes and a touch of spice, making it a great cigar cogn ac . Following Arzac his wife, daughter Elisa and granddaughter ran the company for over 50 years, making it a major player in America and England, until circumstances took it out of family hands in the late 19th century.
